Even though Jacki’s new job allows her less free time to hang out with me and go out to eat, it does give me the opportunity to attend cool events she is involved in, or organizing. Like one of Jody Adams’ cooking classes at Rialto, for example. There is one class per month held at the restaurant, and each month’s theme changes based on the season and upcoming holidays. Lucky for me, the Saturday I was free to attend happened to be the truffle class. (YES!) Each class starts with a demonstration of the dishes, and ends with a lunch–complete with wine pairings, thus making it the perfect holiday gift for just about anyone with a soul. And trust me, this is not a shameless plug. I had a very lovely Saturday sitting with perfect strangers, and could not think of anyone who wouldn’t enjoy one these.

Rialto’s head pastry chef, Jonathan Posiko, is killing it with the baked goods. He’s been working in the kitchen at Rialto for 8 years now, but was recently promoted to the new role and wow was it well deserved. Best scone I’ve ever had. And just wait until I get to the dessert course.
Jody is usually joined by colleague Steve Nill, a teacher over at the Cambridge School of Culinary Arts, who assists with the demo.
The first course: scallop crudo with clementines and truffle salt
Wine pairing: Gavi di Gavi
Second course: homemade egg yolk pasta with shaved truffles

Wine pairing: Nebbiolo
Third course: arugula and herb salad with grilled beef and truffle vinaigrette
Best part of the meal: truffled potato with slow cooked egg and black truffles
Dessert on the way out: sweet ricotta ravioli with truffle oil
The December cooking class is already sold out, but the 2013 winter schedule was recently posted. You’ll find dates and themes for classes here, more details on menu items are being posted over the next couple of weeks.

















I want every course but especially the pasta with shaved truffle. Ah-mazing!
