Whoever thought to mix lobster, cheese and caramel all in one dish is nothing short of a legend in my mind. And then to somehow make it taste good?! Genius. At Nix’s Mate they serve lightly fried lobster with a caramel sauce and warm vermont cheddar sauce (!!!) and green onions and chiles. What is that? I don’t even know. What I do know is when you see it you’ll inevitably have the desire to fill a kiddie pool with the caramel cheese sauce and and jump in.

After reading this blog post last Saturday, I booked a reservation at Nix’s Mate for that evening. The lobster appetizer with caramel and cheddar sauce was incredible. The entrees were not as impressive but I would definitely return for the lobster appetizer if I got the chance. Thanks for the tip!
