When we finally made it to Arizona on our road trip the only thing I ate for all five days was tacos. I couldn’t help it, they were amazing EVERYWHERE, and served in some places until 3am. This particular spot, America’s Tacos, is located right by the ASU campus in Tempe. It’s an order-at-the-counter type of spot that does only tacos, chips and salsa, cold beers and huge margaritas. What more could one person want? Well, besides a sunny outdoor patio with picnic tables. Ah yes, they have that too.
They only have two types of meat to choose from: Al Pastor (roasted pork) and Carne Asada. Both were good, but the Al Pastor was seriously out of this world. They roast it all day on a spit, Shwarma style, so the meat for each taco is cut to order. To serve the pork is topped with a homemade tomatillo sauce, chopped cilantro and roasted pineapple. If that doesn’t get you excited for Cinco de Mayo, I don’t know what will!
